Spinach Lasagna

  • 1 pkt lasagna sheets (white)
  • 2 kg fresh spinach
  • 4 tbsp pine nuts
  • 2 tbsp onions (chopped)
  • 1 tbsp garlic
  • 1 tbsp olive oil
  • 10 Kiri squares (cut into four pieces)
  • 1 large tomato
  • ½ tbsp baking powder
  • Salt and pepper


Boil the lasagna sheets as per the instructions given on the packet
Clean the spinach, removing the stalks and wash in cold water. Then drain well.
Bring a large pan of water to the boil, add salt and then baking powder. Then add spinach and stir. Cook for about three minutes
Drain the spinach and refresh with cold water. Squeeze by hand into big size balls and chop.
Heat a pan, pour in the olive oil and add onions, garlic and pine nuts. When the pine nuts turn to brown, add the spinach. Then add 8 Kiri squares and mix well. Season with salt and pepper.
Brush your oven proof dish with some olive oil to prevent sticking.
Start with a layer of lasagna, then spread the spinach evenly and continue to add alternate layers of pasta and sauce.
Chop the tomato and scatter it on top of the lasagna. Dot with the remaining Kiri squares.
Bake in an oven on moderate heat for about thirty minutes
Serve hot with garlic bread on the side if you wish.
